Coconut Tres Leches Overnight Oats are perfect for snacking and breakfast, or alternatively as a satisfying dessert. These oats are a healthier alternative to the usual quick-cooking oats, and also have a slight sweetness that would be perfect for those of us with sweet tooths.


– 1 1/2 cups of quick cooking rolled oats

– 3/4 cup of all-purpose flour (or wheat flour)

– 3/4 cup of coconut milk, chilled in a bowl in the freezer overnight

– 1 1/2 teaspoons of baking powder (dry yeast variety)


Cook your oats as usual and let cool. Mix all ingredients together into a thick batter, and then mix well until smooth. Cover well with plastic wrap, and place in the fridge for 4 hours.


While oat mixture is chilling in the fridge, whip up your cream and sugar.

Remove oats from fridge and let stand in hot water for 5 minutes to soften.

Grease your hand before gently scooping out a portion of the oat mixture, and drizzle with honey or agave . Drizzle with whipped cream, or pour over the top of your serving.

If you wish to freeze it for later use, make sure to thoroughly grease a container before freezing. Place in the fridge overnight after taking out of the freezer, and heat it up in the microwave for 1-2 minutes. This will ensure that it is completely thawed before serving.
